BACON CHEESE PUFFS
6 pieces bread, sliced thin
12 slices bacon
1 c. grated Swiss cheese
Trim crusts and cut each slice of bread into four squares. Butter lightly, if you wish. Cut bacon slices in two (each piece 3" long). Lay one piece of bread in the center of each piece of bacon, sprinkle amply with grated cheese and roll up. Secure with toothpick and place on rack in shallow pan. Scatter remaining cheese on top. Bake in 400 degree oven for 20 minutes until lightly browned. Serve immediately.
CHEESE PUFFS
1 loaf unsliced bread
1 stick butter
3 oz. cream cheese
2 egg whites
1/4 lb. sharp cheese
Melt the cheese and butter in a double boiler. Beat the egg whites until stiff. Cut the bread into 1" cubes. Fold egg whites into cheese and dip the bread cubes into mixture until they are covered. Chill on a cookie sheet. Bake at 400 degrees about 20 minutes or until brown. These may be frozen on a cookie sheet and store in plastic bags indefinitely. For a different taste add a little scraped onion, or bacon crumbs, or top with paprika.
