IMPOSSIBLE QUICHE

12 slices drained crumbled bacon
4 beaten eggs
1/4 tsp. salt
1/2 c. Bisquick
1/2 c. chopped onions
1 c. (4 oz.) shredded Swiss
2 c. sweet milk
1/2 tsp. pepper

Grease 2 pie tins, 9 inch sizes. Spread bacon, onion and cheese over bottom. Mix rest of ingredients real well. Pour over other ingredients. Bake at 350 degrees for 50 to 55 minutes, cut after 5 minutes. Refrigerate leftovers.

IMPOSSIBLE QUICHE

1-2 c. ham, cubed
1 c. (4 oz.) Swiss OR Cheddar cheese,
shredded
1 sm. can mushrooms, chopped
2 c. milk
1/2 c. Bisquick
4 extra-lg. eggs
1/2 tsp. salt
1/4 tsp. pepper

Heat oven to 350 degrees. Grease a 10 inch pie plate (I use a glass plate with fluted edge). Sprinkle ham, cheese and mushrooms evenly over bottom. Place milk, Bisquick, eggs, salt and pepper in blender and blend on high speed for 1 minute. Pour carefully over ingredients in pie plate. Bake until knife in center comes out clean, about 55-60 minutes. Let stand 5 minutes before cutting. Makes 6-8 servings. Variations: Add chopped onions, green or regular; use spinach, thawed and drained well, in place of broccoli; substitute fried bacon for the ham, or substitute chicken or turkey.
