LITTLE CHEESE CAKES

2 (8 oz.) cream cheese
2 eggs
3/4 c. sugar
1 tsp. vanilla

Blend top four ingredients together until smooth. 1 box Nilla vanilla wafers (Nabisco)
1 can pie filling
Cup cake pan and liners

Fill pan with liners and 1 cookie in each cup. Pour cheese mixture 1/2 full in each cup. Bake at 325 degrees for 12 to 15 minutes. Cool and top with pie filling or fresh strawberries glazed with melted apple jelly.

LITTLE CHEESE CAKES

2 (8 oz.) cream cheese

3/4 c. white sugar
1 tbsp. lemon juice
1 tsp. vanilla

Beat above. Put 24 vanilla wafers in 24 cup cakes. Put beaten mixture over wafers. Bake at 375 degrees for 15-20 minutes (until firm, not brown). Top with pie filling. Or jam or strawberries with glaze. Can be prepared in a hurry.
