MANDARIN ORANGE MOLD

2 pkgs. orange gelatin
2 c. boiling water
2 (6 oz.) cans frozen orange juice
concentrate
1 (11 or 16 oz.) can mandarin orange
slices

--SOUR CREAM HONEY MINT DRESSING:--

1 c. sour cream or plain yogurt
2 tbsp. honey
2 tsp. mandarin orange syrup
1 tbsp. minced fresh mint (optional)

Dissolve orange gelatin in the boiling water. Stir in the frozen orange concentrate until blended. Into a 6 cup gelatin mold, either a ring mold or other shape, pour the orange gelatin mixture. Drain the oranges, reserving the liquid. Spoon the oranges into the gelatin. Chill until set. In a small bowl, combine the sour cream, honey, syrup and mint. Blend until mixture is smooth. Chill until ready to serve. Unmold salad by quickly dipping in hot water. Surround with lettuce. Serve with melon balls and dressing. Makes 6 to 8 servings. Good served with roast chicken or turkey, brown rice tossed with green onions and sliced almonds and soft dinner rolls. Tips: If using a deep mold, not a shallow ring mold, you may want to chill gelatin mixture until slightly thickened. Then add the drained mandarin oranges.
