NUT AND RAISIN SPREAD
1 med. orange
1 c. broken pecans
2 1/2 c. light raisins
3/4 c. mayonnaise or salad dressing
Orange slices, celery sticks or
assorted crackers for serving
Do not peel orange. Quarter and seed orange. In a food processor bowl, process orange and nuts, covered, until finely chopped. Add half of the raisins and all of the mayonnaise or salad dressing. Cover; process until raisins are chopped. Add remaining raisins; cover and process until finely chopped. Transfer to a covered container; chill. (Or place in a moisture and vapor-proof freezer container; seal, label and freeze up to 3 months. Thaw in refrigerator several hours.) To serve, spread on orange slices, celery, or crackers. Makes 3 1/2 cups. If using a food grinder instead of food processor: Run the seed and quartered orange, pecans and raisins through fine blade of food grinder. Stir in mayonnaise.
