PEACHES AND CREAM CHEESECAKE
Heat oven to 350 degrees. Grease bottom and side of 9 inch pie pan. Combine and beat for 2 minutes at medium speed: 1 tsp. baking powder 1/2 tsp. salt 1 sm. pkg. vanilla pudding (NOT INSTANT) 3 tbsp. margarine 1 egg 1/2 c. milk Pour into pie pan. Drain 15 oz. can peaches. Reserve juice. Arrange peaches on top of batter. In small bowl, mix for 2 minutes: 1/2 c. sugar 3 to 4 tbsp. peach juice Put on top of peaches with small spoonful. Leave a little from edge of pan. Sprinkle with cinnamon and 1 tablespoon sugar. Bake 30 to 35 minutes. Refrigerate after cool.

3/4 c. all purpose flour, not self
rising
1 tsp. baking powder
1/2 c. milk
1/2 tsp. salt
3 tbsp. melted
1 egg
1 (3 oz.) vanilla pudding mix, not
instant
Prepare and butter a 8 or 9 inch deep dish. Mix above ingredients and pour into pan. Drain 1 large can of sliced peaches (reserving juice) and place on top of batter. Mix: 3 tbsp. reserved peach juice (may need more added) 1/2 c. sugar Spoon over peaches to within an inch of the rim of pan. Mix 1 tablespoon sugar with 1/2 teaspoon cinnamon. Sprinkle on top of cheese mix and bake at 350 degrees for 35 minutes.
