POTATO PANCAKES

6 med. potatoes
1 onion
2 eggs, well beaten
1/2 c. flour
1 tsp. salt
Oil (enough so they float)

Grate potatoes finely into a bowl, grate onion into potatoes. Beat in eggs, flour and salt. Heat oil in skillet. Spoon batter into oil. Brown and drain on paper towel.

POTATO PANCAKES

3 lg. potatoes, grated (about 3 c.)
1 1/2 to 2 tbsp. flour
2 eggs
1 tsp. milk
Dash salt
Corn oil
Sour cream, applesauce

Grate potatoes, pouring off water. Potatoes must be well drained. Add flour stirring lightly. Beat eggs with milk and stir into potatoes with salt and pepper. Add more flour if mixture appears too loose. Heat 2 or 3 tablespoons oil in a large skillet. When oil is hot drop potato mixture by spoonfuls into oil. Flatten slightly with back of spoon to make pancakes. Cook, turning once, until golden brown on both sides, about 2 or 3 minutes. Add more oil to pan as needed. Serve hot with sour cream and/or applesauce.
