PUMPKIN ROLL
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. soda
1/2 tsp. cinnamon
3/4 c. flour
Take a cookie sheet and line with wax paper then spray wax paper with Pam. Then pour dough on this. Sprinkle with nuts (any kind) or can omit. Bake at 375 degrees for 15 minutes. Take a clean dish towel and sprinkle with powdered sugar after taking pan out of oven, flip onto dish towel. Leave wax paper on ?? roll the finished product up on the longest side, while it is still warm. Leave in the dish towel until cool. After cool, unroll and take wax paper out. Spread with filling.FILLING:
1 (8 oz.) pkg. cream cheese
1/2 tsp. vanilla
1 c. powdered sugar
2 tbsp. margarine
Mix the above ingredients well and spread on dough. Roll back up without towel. Wrap in Saran Wrap and then aluminum foil. Can freeze. 1 small can pumpkin = 3 loaves. 1 large can pumpkin = 5 loaves.

3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
Beat eggs and sugar for 5 minutes. Stir in pumpkin and lemon; blend in flour, baking powder, and spices. Pour into greased bar pan and bake 15 minutes at 375 degrees. Turn out on a towel with powdered sugar. Roll and cool. Unroll and spread with filling. Re-roll and refrigerate.FILLING:
1 c. powdered sugar
2 (3 oz.) pkgs. cream cheese
4 tbsp. margarine
1/2 tsp. vanilla
Mix together well.
