SALMON SPREAD
5 slices Nova Scotia or Lox salmon,
chopped
3 tbsp. onions, diced
Dash of pepper
8 oz. whipped lowfat cottage cheese
Mix until blended. Chill. Spread onto crackers, or use as dip for vegetables. This is great for people on diets, and it is really good.
SMOKED SALMON SPREAD
1 (15 1/2 oz.) can salmon, drained &
flaked
1 (8 oz.) pkg. Neufchatel cheese,
softened
1 tbsp. lemon juice
2 tsp. grated onion
2 tsp. prepared horseradish
1/4 tsp. liquid smoke
3 drops hot sauce
2 tbsp. chopped fresh parsley
Combine first seven ingredients; stir well. Spoon into serving bowl; cover and chill several hours or overnight. Sprinkle with parsley just before serving. Serve with melba rounds. Yield: 2 cups. 38 calories per tablespoon.
