SHRIMP REMOULADE

Blend well: 1 c. mayonnaise
1 tsp. mustard
1 tsp. minced Gherkins
1 tsp. chopped parsley
1 tsp. chopped chives
1/2 tsp. minced fresh garlic (1/4
tsp. dried)
1/2 tsp. anchovy paste
Salt and pepper to taste
3 lbs. cleaned large shrimp

Cover and chill dip and shrimp separately. Serve as appetizer.

SHRIMP REMOULADE

2 tbsp. lemon juice
4 tbsp. olive oil
1 tbsp. Creole mustard
2 green onions with tops, chopped
1/2 c. finely chopped celery
Salt and pepper to taste

Mix all ingredients together. Pour over cooked shrimp. Marinate 4 to 5 hours. Serve on cold shredded lettuce.
