SUGARED NUTS
2 c. nuts (pecans or walnuts)
1 egg white, slightly beaten
1/2 c. sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. allspice
Preheat oven to 325 degrees. Combine the nuts and the egg white in a small bowl and set aside. In another bowl, mix together the sugar and spices. Combine ingredients from both bowls and make sure all the nuts are covered with the sugar mixture. Spread on cookie sheet sprayed with cooking oil spray and bake for 25 minutes. Ovens may vary and nuts may be finished in 20 minutes. Do not scorch. Remove from oven. Mixture will be soft and run together, but will start to harden quickly. Remove immediately from baking sheet onto waxed paper or put in a large bowl or container. The nuts will break apart easily with a spoon.
SPICY SUGARED NUTS
3 c. walnuts or pecans
1 c. sugar
1/2 tsp. salt
1/2 c. water
1 tsp. cinnamon
1 tsp. vanilla
Heat walnuts or pecans at 375 degrees for 5 minutes. Keep warm. Butter sides of 2 quart saucepan and add sugar, salt, water and cinnamon. Stir until sugar is dissolved, then bring to a boil on medium heat. Cook to a soft ball stage or 230 degrees. Remove from heat and beat until creamy. Add vanilla and nuts. Stir gently until nuts are coated. Turn out on buttered platter and separate with 2 forks.
