ZUCCHINI QUICHE/APPETIZER
3 c. thin, unpared zucchini (about 4
sm.)
1 c. Bisquick
1/2 c. chopped onion
1/2 c. Parmesan cheese
2 tbsp. parsley
1/2 tsp. salt
1/2 tsp. oregano
Dash pepper
1 clove garlic, chopped fine, or 1/2
tsp. garlic powder
1/2 c. oil
4 eggs, slightly beaten
Mix all ingredients and put into greased 13x9 pan. Bake 350 degrees for 30-40 minutes.
ZUCCHINI QUICHE
2 c. sliced zucchini
1 clove garlic, minced
1 onion, sliced
Salt
Saute above ingredients in a little butter and put in pie shell crust (recipe follows). 1 c. cream 1 c. milk 1/2 c. shredded Mozzarella Mix together and pour over zucchini mixture. Bake at 375 degrees for 45-60 minutes. Quiche will be done when inserted knife comes out clean.MARSHA'S FANTASTIC QUICHE CRUST:
1 c. whole what flour
2/3 c. shredded cheese
1/4 c. chopped almonds
1/2 tsp. salt
1/4 tsp. paprika
6 tbsp. corn oil
Combine ingredients and press into pie plate. Bake at 400 degrees for 10 minutes.
